last nights dinner.. yummm!

we made this for dinner last night- so good! I would def recommend! It was super easy and fast- my favorite kind of meal!

Asian Lettuce Wraps


Ingredients:
For the sauce:
1½ tsp. hoisin sauce
1 tsp. soy sauce
½ tsp. sesame oil
1 tsp. rice wine vinegar
Freshly ground black pepper
1 tsp. Sriracha hot sauce

For the filling:
2 tsp. canola oil
1 tsp. minced garlic
½ tsp. grated fresh ginger
2 green onions, chopped
1 lb. ground turkey or chicken
2 cups mixed vegetables
½ green apple, finely chopped
To assemble:
Butter lettuce leaves, washed and separated
Shredded carrots for topping (optional)

Directions:
Combine all the ingredients for the sauce in a small bowl and mix to blend.
To make the filling, heat a skillet on high heat with cooking oil.  Once the pan is hot, add the garlic, ginger and green onions to the pan, and stir fry for a few seconds, just until fragrant.  Add the ground turkey or chicken, breaking into small pieces, and cook until almost cooked through.  Add the vegetables to the pan and cook for 1-2 minutes.  Mix in the sauce and cook for about 1 minute until thickened slightly.  Add the apples to the pan and toss to coat.  Immediately remove the pan from the heat.

Serve the filling in lettuce “cups” and top with shredded carrots, if desired.

I just ran across this recipe: Pumpkin White Hot Chocolate from Good Life Eats.  These look so yummy that I may go home and make these tonight! 



Pumpkin Spice White Hot Chocolate

Ingredients:

4-5 cups whole milk
12 ounces white chocolate, chopped
4 teaspoons cocoa powder
3/4 teaspoon vanilla extract
1 cup pure pumpkin puree
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon cardamom
1/8 teaspoon allspice
1/8 teaspoon ground ginger

Directions:

In a heavy saucepan, combine 2 cups of milk, white chocolate, and cocoa powder. 

Cook over medium heat, whisking periodically, until the chocolate is melted and the mixture is well combined. 

Whisk in the pumpkin puree, cinnamon, nutmeg, cardamom, allspice, and ginger. A

dd the remaining milk, 1 cup at a time, until the desired consistency is reached.

If desired, serve topped with whipped cream and a sprinkling of nutmeg.

Buffalo Chicken Sandwiches

We made these last night for friends that came over to watch football.  Well, the boys watched football, while us girls chatted in the dining room! This is such an easy meal (LOVE the crock-pot!) and the boys approved.

-Chicken Breasts (I used 4, and there were enough for the 4 of us, plus leftovers)
-1/2 bottle of Frank's Buffalo Wing Sauce
-1 packet dry Ranch dressing mix
-Potato Rolls, Hawaiian Rolls, or Hoagie Buns
-Ranch Dressing

-Put the chicken in the crock pot and cover with the dry ranch and the wing sauce. 

-Cook on Low for 6-8 hours.  Shred.

-Top with a little more sauce, cheese, or ranch dressing.

Crock Pot Taco Soup

 Now that Fall is close by, Michael and I are both so excited to making yummy Fall soups! I have this blog, The Recipe Box, where I've posted some recipes I've found online that look good to me.  I'll post some of my favorites on here :) 

I made this last fall, it was so good! A little spicy for me (I'm not good when it comes to spicy!) but I topped with lots of sour cream and cheese.  I loved this because it was not only delicious, but it was also EASY! I love Crock-Pot recipes, especially ones that can sit at home and cook all day while I'm at work!



SLOW COOKER TACO SOUP

1 pound ground beef
1 (16 oz) can chili beans
1 (15 oz) can kidney beans, drained
1 (15oz) can corn, drained
1 (15 oz) can tomato sauce
2 c. water
1 (14.5 oz) Rotel diced tomatoes
1 (4oz) can diced chopped green chilies
1 pkg taco season mix
1 pkg ranch dressing mix

* Brown ground beef and drain

* Add Taco seasoning and ranch dressing mix

* Stir and cook for 1 min.

* place seasoned meat in crock pot

* add remaining ingredients

* Mix to blend and cook low for 8-10 hours


Serve with tortilla chips, a dollop of sour cream and shredded cheddar cheese.

My favorite Salad Recipe

1 envelope GOOD SEASONS Italian Dressing Mix
4 or 5fresh pears, cut into cubes(I love the pears, so I do 4 or 5, but 3 is acceptable too)
1 pkg. torn salad greens
1/2 cup  dried cranberries
1/4 cup chopped toasted walnuts

PREPARE dressing mix using the less oil directions as directed on envelope. 




TOSS greens, cranberries and in large bowl. Add pears; mix lightly. Serve immediately. 


I always pour small amounts of dressing on so if there are any leftovers, they don't get soggy, but if you are serving a large crowd, I would recommend pouring the dressing on before serving! :)

The only reason I like it when it snows...

Snow Cream

In a large bowl, mix about 1 cup of milk, 1/2 cup of sugar, and 1/2 teaspoon vanilla.  Then Add in enough snow (About 3 quarts).

Stir it all together and enjoy. I can eat pretty much the whole bowl myself!

Football Snack

Looking for that perfect game day snack? I've got your answer right here! (today is a perfect day to make this recipe!) This spicy pretzel recipe is super easy to make and tastes delicious!

Needed:
15 oz Bag of Pretzels
6 oz Vegetable Oil
1 pkg Hidden Valley Ranch Dressing
2 tsp Cayenne Pepper
1 tsp Garlic Powder
1.5 tsp Lemon Pepper



Directions
Mix together seasoning and oil. Place pretzels in large ziploc bag (the gallon size works for one batch), add seasoning mix, and toss periodically. I then lay them out of a baking sheet and pop them into the oven for a few minutes until they aren't oily anymore.

Tortillia Chili

We made this yesterday- so yummy! And easy!


Dump in your crockpot, the following ingredients:
4 split boneless, skinless chicken breasts
2 cans of Mexican style chopped tomatoes, un-drained
2 cans of black beans, un-drained
1 can tomato sauce
1 jar of medium or hot salsa
1 can chopped green chiles
Cook for 8 hours or so on Low.
Take chicken breasts out and shred or cut into small pieces and then throw back in.

Spoon chili in bowl and top with cheese and chips and sour cream.
